The olives for this bioharvest-farmed extra-virgin olive oil are grown on a family orchard on the island of Crete, produced in a single on-site mill, and hand-picked and bottled using only one variety of olives. These olives are cold-pressed within hours to ensure maximun freshness and taste, or they are pitted and immediately immersed in sea salt and organic vinegar to bring out depths of flavour, or are blended with pure organic honey and herbs from the mountains of Crete. This pure organic olive oil and unique vinegars create an amazing olive paste (tapenade).
